After the Civil war, Edmund McIlhenny started making a hot sauce that was wildly successful from peppers grown on Avery Island along the gulf coast in Louisiana. Frutescens pods are more piquant than Annuum, or peppers like Jalapeños, and grow upright instead of hanging down.
